Turkey Patties with PearsCuisine: American Category: poultry Servings: 4 Ingredients:1 pound ground turkey1/4 cup reduced-sodium saltine cracker crumbs (about 6 saltine crackers) 3/4 teaspoon ground allspice 1/4 teaspoon salt 1/4 teaspoon pepper 2 egg whites or 1/4 cup cholesterol-free egg product 1/4 cup raisins 1 cup apple juice 2 teaspoons cornstarch 2 small firm unpeeled pears, cut into 1/2-inch slices Instructions:Mix ground turkey, cracker crumbs, allspice, salt, pepper and egg whites. Shape into 4 patties, each about 3/4 inch thick. Spray 10-inch skillet with nonstick cooking spray. Cook patties in skillet over medium heat 7 to 8 minutes on each side, turning once, until brown and no longer pink in centers. Remove from skillet to warm platter; keep warm. Add raisins to skillet. Mix apple juice and cornstarch until smooth; stir into skillet. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in pears. Cook and stir gently until pears are hot.
